Recently I received an invitation to a baby shower in which I never even knew the mom-to-be
was pregnant. Was this gesture appropriate on her part?

Surprise indeed!

It is very unusual for someone to announce their pregnancy via a baby shower invitation. I'm guessing the baby is due in a couple months? Most people announce their pregnancy way before that.

Is this a close friend or just an assoicate? If you two are not that close, maybe she did not feel the need to tell you she is pregnant.

Either way, I do think she should have announced her pregnancy differently.
